My kids and I prefer not to have turkey on festive occasions so we mix things up and will cook a menu based upon a certain theme or ethnicity. Our theme for this year was a Southern Dinner. So we all got onto the internet and pinterest and made ourselves a huge menu of which we will have leftovers for weeks!
We wrote out how long things would take to cook and have oven temperatures ready so we could get everything to be finished at about the same time. I do seriously require a much bigger kitchen for these types of meals!
We made: Hush Puppies, Honey Butter, Fried Confetti Corn, Classic Sweet Potato Casserole, Southern Style Sweet Tea, Ultimate Southern Fried Chicken, Southern Coleslaw and for dessert we had Mississippi Mud Cake. OMG - the amount of food we had!!!
So here is a little insight into each of the recipes and our takes on them:
Hush Puppies - the kids absolutely loved them and want me to make them on a regular basis! I did not have self rising flour or cornmeal so I made my own which seemed to work out fine! Bren hated trying to grate the onion so I may have to see if there is an easier way for next time! Honey Butter - this is an accompaniment to the Hush Puppies but would also be absolutely delicious with corn bread! This was super easy to make and I really enjoyed it!! Just make sure that the butter is soft enough so it mixes well! https://www.spendwithpennies.com/honey-butter/
Southern Coleslaw - I really love Southern Coleslaw and I think it is just the freshness of the dressing that you make and how it has a bit of a sweet taste to it. This is definitely something that I will make again when making pulled pork or chicken that need a coleslaw to go with it and then just half the recipe.
