I do like breakfast wraps and will order them when we go out and have made them from time to time at home but it's usually eggs, cheese and salsa.
I was super excited when I saw this recipe and knew I had to give it a try but I also knew I was going to have to make some alterations. I had planned to make the wraps earlier in the week than when I actually got to them so my avocado's were rotting. I find avocado's don't last too long once we buy them and I had plans but it just didn't work out.
Now for this batch I also never made the beans as I was just tired and wanted to get them done and didn't have everything I needed. I also used hashbrowns instead of tator-tots (crispy crowns).
I also made some of them with a breakfast sausage and so some had bacon and others didn't. I made a whole bunch of them but I really need to perfect my wrapping techniques as I found they were difficult to keep together.
I got a bunch of them in the freezer but haven't tried to reheat them yet. I will definitely make these again and try them with the added ingredients that I missed this time!
