Date night for the boy & I!
So he was wanting nachos but I needed to make sure that he was getting some more protein in him than that so I decided to add some leftover chili and get all that extra fiber and nutrition into him.
I strained the chili a little to try and get some of the juices out of the nachos so it wouldn't get the chips all soggy. I loved actually having the chicken and the corn on the nachos and I think this is such a great idea depending upon the kind of chili that you use. I noticed that Bren picked around the chips that had the big pieces of tomato on it!
Such a great and easy meal!
