I remember growing up whenever we went to my grandparents for dinner that it would almost always be a full spread but I rarely seem to be able to find the time to get it done. I miss the simplicity of when I grew up as we definitely were not as busy and dinners were the time that we all got to sit down and eat together and talk about our days.
Now I seem to be trying to fit dinners in between driving to practices and with my crazy and unpredictable work schedule it's getting more difficult to plan. So when I find a night that I don't work and that I have both kids in one place I try and take advantage of it!
This dinner was great as I did get a little bit of help putting it all together which makes it even better!
I love ribs but I really haven't had a great relationship with pork since my second pregnancy so we really space it out but when I eat pork it's either bacon, sausages or ribs.
These ribs looked great and they were cooked all day in Dr. Pepper on the stove before being smothered in BBQ sauce and cooked on the BBQ. Now I ended up using more Dr. Pepper than it required as I found it was boiling off so I'm not too sure if I had it up to high or maybe had too many ribs. I used Sweet Baby Ray's as my BBQ sauce and they were soooo good!
The next thing I made was Garlic Butter Smashed Potatoes which were really good but I think I could have used more sauce on them. I had the potatoes cooking in my slow cooker all day and then transferred them to a pan where I squished them, added the butter and then topped a few with bacon and cheese. I think I could have cooked them a little longer to get more crispy and as mentioned above I needed more garlic and butter on them.
The last thing I made was Cheesy Green Bean Casserole with Bacon. I remember having this as a kid and it was the best way of eating green beans! I wanted the kids to give it a try as it is something different but also fun with the bacon and the fried onions! This recipe was super easy to follow and I followed everything in the recipe and it turned out awesome.
I love meals like this and I can't wait until I find some more time to do another one!
