I have been trying to incorporate more veggies into the kids diets lately as an attempt to eat healthy and try and shed some of my extra pounds. Working different shifts all of the time makes it somewhat difficult to plan and make sure the kids are heating healthy but I am trying.
I have followed Two Peas & Their Pod for a long time and they are great for healthy recipes which I really appreciate and I have made some great stuff from their blog.
These beans were so easy to make and had a great crunch to them. We used lemon juice and garlic and then sprinkled parmesan over them as well and my son had a couple of helpings!
