We seriously love nachos and whenever we seem to be stuck for a meal at the last minute that's what we end up having. Unfortunately they are usually very plain and we throw whatever leftovers we can find on them, well within reason.
I love finding new nacho recipes as it keeps everything fresh and gives me more ideas. This one looked amazing as I love bbq chicken and so I knew it was going to be a keeper.
We cooked up the chicken with the spices and used Sweet Baby Ray's barbeque sauce as it is our favorite!!
Now we used a sheet pan instead of the cast iron so ours was a single layer instead of a double layer. With three of us sharing I find it much easier to use the sheet pan.
I loved the mix of chicken and bacon and the only thing that we skipped was the tomato as none of us care for it and I didn't have any parsley so we missed that too. We also didn't add too much sour cream on top as I found it really difficult to spread out. I think next time I would also add some feta cheese and pineapple as well. I have this strange addiction to bbq chicken and pineapple together.
